Mushroom Pasta

Pasta with mushrooms, wishbone chicken bone broth, pine nuts and pecorino cheese

This is a personal favourite, healthy comfort food, with pasta…. doesn’t get better than that! You can use any type of pasta, ideally pappardelle or plain spaghetti, any type works as well. It doesn’t take more than 10’, and needs to be eaten hot, on the spot !

What you need are things you easily have in your fridge. Mushrooms, Wishbone bone broth, pine nuts (they add depth and texture), garlic, white wine, pecorino cheese and if you want some parsley or thyme. To serve 4 you would need 500 gr. of pasta, 500 gr. of mushrooms (mixed or any type you like), 2 large cloves of garlic and grated pecorino.

Chop the mushrooms and sauté in a large skillet with extra virgin olive oil (if you go for 500 gr. of pasta you would need a large and a bit deep skillet, to fit all the pasta). After 3-4 minutes add the finely chopped garlic cloves and a handful of pine nuts. Add some more olive oil and pepper and salt to your taste and let them cook together for another 2-3 minutes. Then add half a glass of white wine. After 1-2 minutes or after the wine evaporates, add one mug of Wishbone Bone Broth, some parsley or thyme and lower the heat. After 3-4 minutes (or once the pasta is ready) you can turn off the heat completely

After you add Wishbone Bone Broth and lower the heat for the sauce, you can pour the pasta in salted boiling water. Cook al dente, or almost 2 minutes before the suggested cooking time. Drain and keep a mug of the cooking water, just in case. Now pour all the drained pasta in the warm skillet with the sauce and let it cook together for exactly 1’. In this minute if your pasta gets dry add some of the cooking water, if it is watery add grated pecorino cheese.

Remove from the heat and serve hot in 4 portions, with more grated pecorino cheese and a lot of pepper !
